There are 2 basic types of wall adapters: regulated and unregulated.
Regulated wall adapters are the result of advances in solid-state circuitry that allow a range of input voltages to be converted to a stable DC output voltage no matter how small the current drawn. They use less materials, they weigh less, they're more efficient, and they provide a stable output. One drawback to regulated adapters is that they can be susceptible to intereference from high voltage fields, such as those created by ion generators or tesla coils, so we avoid using them in such an environment.
Unregulated wall adapters work fine when used at their rated voltage and current, but the voltage will increase if less current is drawn. So using a large unregulated adapter with a small device can be a problem. The unloaded voltage of these adapters can be 40% more than the rated value, meaning an unregulated 12V adapter could in fact have a 17V output with no load (open circuit). In this way it is possible to overpower a device which uses only a small current, such as using a 2A wall adapter to power a device that runs on 0.1A, which might give 16V at the input terminals, potentially harming or destroying the device! This is not a problem if the unregulated adapter is matched to the device it is powering, or when using regulated adapters.
